This week the kids are out of school from Wednesday through Friday because of parent/teacher conferences.  So, I am a little excited that we don't have to be so rigid with having our dinner time and can just chill for a few days!

Usually when there's more time in the day (or evening, as the case may be) to prepare a meal, I am more apt to having a more relaxed attitude about family dinnertime.  I love having the kids home from school!

So here's the scoop on our meal plan this week:

Monday:   Soft tacos with homemade flour tortillas + all the fixins.

Tuesday:  Pizza party playdate!  A good friend of mine is hosting what she's calling a "leaf party" which ironically is likely the last day of decent weather around here.  :(  SO NOT looking forward to the cold setting in for the season.  So, we're heading over to her place for a fun pizza party and playdate for the kids (and grownups!)

Wednesday: Roasted chicken with broccoli, cauliflower, and chickpeas, tossed salad, bread + butter.

Thursday:  Cornmeal crusted tilapia with salsa, Spanish rice, beans.

Friday:  Baked ziti, salad, bread.

Saturday: Out!

Sunday – Beef stroganoff.
