recipe:  Cap's Crunch Chicken Tenders

These are subtly sweet and savory but oh-so-yummy!

Last month when I was visiting my mom in Texas, I shared how I'd discovered how many cookbooks she had in her possession.  We must have spent hours just flipping through all of the many different ones she had, talking about what recipes we would want to make or how certain recipes might be improved upon. 

As we were going through all of the cookbooks, I came across one titled America's Most Wanted Recipes, which seemed intriguing, mostly because I love to eat out and am always curious on finding out how my favorite restaurants dish up some of their best entrees.  As I thumbed through the pages of recipes from different restaurants, I came across a seemingly easy and yummy recipe for plain chicken breasts.  Now, I'm a huge meat-eater and don't usually prefer to eat chicken so it's always hard for me to discover different ways to prepare it. When i read that Cap'n Crunch & Corn Flakes cereals were the main ingredients of the recipe, I was hooked!

So, I recently made these and I have to say I think they are our new favorite way to enjoy chicken breasts, especially since my kids are big chicken nugget fans!  I hope you'll enjoy it with your family too.  I should mention that the measurements in the recipe below have been modified by me to feed our family of 5.  You may not need as much of the breading if you are only using 4-6 chicken breasts.

Planet Hollywood's Cap'n Crunch Chicken Tenders

What you need:

1 1/2 cups Cap'n Crunch cereal, crushed

1 cup Kellogg's Corn Flakes, crushed

2 eggs

1 cup milk

2 teaspoons onion powder

2 teaspoons garlic powder

1 teaspoon fresh black pepper

2 lbs boneless, skinless chicken breasts – cut into strips

What to do:

1.  Preheat the oven to 350 degrees.

2.  Combine the crushed cereals in a large bowl and set aside.

3.  Beat the egg with the milk.  Then add the onion powder, garlic powder, and black pepper to the egg mixture and mix well.

4.  Dip each chicken strip into the egg mixture and then roll it in the cereal mixture, making sure to coat it well.

5.  Place the coated chicken strips on foil-covered baking sheet sprayed with cooking spray.

6.  Bake chicken for 20 minutes or until chicken is cooked all the way through.

Allow the strips to cool for a few minutes.  We enjoyed serving these with honey mustard and ranch dressing (for the kids).

    You are SO missing out by not making the creole mustard dip. It’s easy and is the perfect balance and tang to the sweetness of the chicken.
