Peanut butter is practically a food group here in our house. Not only does my 7 year-old take a peanut butter and jelly sandwich for lunch just about every day, but the hubs would do a week’s worth of housework for just a dozen homemade peanut butter cookies. And me? One of my all-time favorite snacks are honey roasted peanuts – shoved into my mouth by the handfuls. I know I can’t go wrong because with 7 grams per serving, peanuts contain more energy boosting protein than any nut. And, the fact that they have more than 30 essential vitamins and nutrients, I love knowing I’m snacking on a Superfood.
Since my kids are big on sleeping {especially during the school week}, they struggle with getting up in enough time to eat a protein packed breakfast. School starts at 7:45 a.m. and I am doing well just to wake them up at 6:45 and have them down and dressed by 7:05. We usually have to leave by 7:35 or so to get through the long drop-off line and avoid a tardy slip.
So, recently I’ve been experimenting with some ways to prepare a fast, healthy, and yummy breakfast for them that they can even take on-the-go.

What you need:
1 cup 2% or 1% low-fat chocolate milk
½ cup frozen banana slices
1 tablespoon peanut butter
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
What to do:
Combine all ingredients using a blender and blend well until consistency is smooth and creamy. Pour shake into a glass or lidded insulated cup to enjoy on-the-go.
My kids are absolutely loving this fun treat for breakfast, but it truly can be enjoyed just about any time of day. Most mornings I am off taking my preschooler on errands or to various activities like story time or playgroups and this easy, nutritious, and delicious breakfast shake makes it easy to grab breakfast while I’m in the run.
