I've got a quick, easy, and delish dinner idea to share with you today!  You know me, I am all about those three charecteristics when it comes to feeding my family.  With my picky crew, this Italian Pasta Skillet was a hit! Check it out . . .

Start with some chopped red pepper and onion. You can use just about any other pepper you have on hand but the red is a nice color and flavor!

While you're getting that all chopped up, set some water to boil.  You'll need it for the pasta.

Once your veggies are all chopped and ready to go, drizzle some olive oil into a skillet and heat over medium-high.

Add in about a pound of mild {or hot, if you like} Italian sausage and throw in your veggies that you chopped earlier.

By now, your pot of water should be just about boiling.

Add in your box of rotini or other pasta of your choice and let it cook to al dente.  And, get that jar of marinara sauce ready!

Mix in your marinara / pasta sauce and heat through.

Once your pasta is cooked, add it to the skillet of sausage, sauce, and veggies.  Then, mix it really well, coating all the pasta with the sauce mixture.  Start to sprinkle some cheese and stir it in.  I like to use 4-cheese Italian for this dish but you can use Mozzarella or whatever you have on hand.

After it's all mixed up really well, sprinkle another layer of cheese on top before sticking this in the oven to bake.

Place it in the oven at 450 degrees for 8 to 10 minutes or until it gets hot and bubbly like this:

Once that's done, pull it out of the oven and let it cool for about 5 minutes.

I like to serve it up with some yummy bread and the crowd goes wild!

One of the easiest dinner dishes ever!  Try it!  This recipe is a variation on this recipe from my Good Eats Pinterest board.  I decided to use ground sausage instead of sliced sausage coins because of my family's preference.  I could also see throwing in some chopped spinach into this dish that would kick it up a bit and add to the veggie count.  Hope you enjoy!
