To me, nothing says more about traditions with family other than food!  Food is a HUGE part of all of my family celebrations and this holiday season will be no different.

I'm looking forward to spending the Christmas holiday at my mom's for the first time in many years.  And although I probably won't be doing too much of the cooking {but, hey, I make one heck of a taste-tester!} I know that during our gatherings the menu will call for something that is quick, simple, tasty, and filling! 

Today I'm sharing one of my new favorite slow-cooker discoveries – Creamy Shredded Chicken Tacos topped with homemade guacamole using Avocados from Mexico!  What's great about this dish is that the ingredients are super-simple AND it is tasty and can feed a crowd.

Here's how to make them:

What you need:

  • 6 boneless skinless chicken breasts
  • one jar of your favorite salsa
  • 4 oz. (half block) of cream cheese, diced
  • 2 tbsp. or 1 pkg. of taco seasoning
  • shredded cheese (cheddar or monterrey jack works great!)
  • tortillas
  • Homemade guacamole using Avocados from Mexico

What to do:

  • Coat inside of slow-cooker with nonstick cooking spray.  Add chicken breasts and top with taco seasoning, salsa, and cream cheese.  Stir gently to mix up.  Cook on high for 4-6 hours. 
  • Once chicken is done, stir up mixture and shred easily with fork.
  • Place chicken mixture into tortillas and top with shredded cheese and guacamole and serve.

What makes this dish a winner is that it is so easy and versatile.  Add peppers and onions to slow cooker to make it your own, for example.  This is one of those meals that can be cooking while you are enjoying your holiday company and everyone will LOVE it!
