This week I am offering my family two options for dinner, as inspired by a sign I recently saw:
Option 1: Take it.
Option 2: Leave it.
I usually do all of my upcoming week's menu planning on Sunday along with grocery shopping, but since we have open house at the kids' school tomorrow, I actually was able to get the planning part out of the way yesterday! I start by writing down all of our daily activies and appointments for the week on a tear-sheet style weekly calendar and then posting it on the fridge. At the bottom of each day, I list what's being served for dinner. Wednesdays are usually slow-cooker days because of the fact that I have to take one kiddo to an activity and my husband has to take another kiddo to basketball practice. So, I need something that is cooked and warm in the crock pot and that will be ready when we are! I also rarely cook on Fridays but I was on a roll when planning this out so I just stuck a Friday meal on there just for kicks! I think it should work though! Here's the low -down:
- Monday:
Cheddar Ranch Chicken (only I use flour instead of bread crumbs), rice, roasted asparagus.
- Tuesday
Shrimp tacos, Spanish rice (sorry I don't have a recipe for this…..it's a family recipe so I just eyeball it and just use long grain white rice, tomato sauce, bell peppers, onion, chicken broth, ground cumin, garlic, salt, & pepper.) , Wahoo's homemade green sauce (I am looking forward to making this for the first time! I remember it fondly when David and I used to live in California and could actually dine at a Wahoo's!! YUM! ), sliced avocado.
- Wednesday
Crockpot Chinese pork ribs (I also add a little bit of Chinese Five Spice and ginger to this recipe), steamed rice, steamed broccoli. We're doing a Chinese theme this night in celebration of Chinese New Year! You could just as easily opt for Chinese take-out to commemorate!
- Thursday
Sloppy Joes, Alexia brand waffle fries, corn
- Friday
- Saturday
