Last night in honor of the Academy Awards, I thought it fitting that I fix up a nice dessert for the kids and I to enjoy.  I started thumbing through one of my favorite cookbooks that I hadn’t actually cracked open in a long time, and their recipe for No Bake Strawberry Cheesecake was just calling.  My. Name.  Then I read the comments in the book  – “This easy version is ready to enjoy in no time at all!”  I knew it was a winner!

You’ll need:

4 oz cream cheese, softened
1/4 c. sugar
1/2 c. sour cream
1 t. vanilla extract
4 oz. whipped topping
1 c. strawberry glaze
9-inch graham cracker pie crust, unbaked
1 pt. stawberries, thinly sliced (I used about 3/4 of a pint and we still had tons left over!)

First, you’ll beat cream cheese until smooth, then gradually beat in sugar.  Blend in sour cream and vanilla.  Fold in whipped topping to blend well.

 
Next, spread a thin layer of glaze over the botton of the crust and layer strawberry slices on the glaze.

 

 

 
Then, cover with an additional layer of glaze and smooth the cream cheese mixture on top.

 
I also went ahead and topped with additional strawberries because, well I like it that way.  Plus, we had tons left over!

 
Cover and chill until set (about an hour), or until you can’t wait to have a bite!

 
This was SO delish!  I helped myself to two slices while watching TV.  Enjoy!
