I'm not sure why I find it helpful to nibble on something while I come up with what I'm making for dinner each week.  Right now my snack of choice seems to be the chocoate chip cookies I baked up this past weekend.  With 4 males in the house, lemme just say that I adore bedtime because it has become the time of day where I can finally dig into some of these yummy treats uninterrupted!

This week is jam-packed with activities for the kids and our family in general so I'm excited to have a great menu plan that is quick, easy, and not too "out there"!! Mainstream cooking is my fave! Here's what we're munchin' on this week:

Monday:  Mexican Bean & Beef Bake (this is a recipe I am winging as I go….can't wait to share it with you!), and homemade tortillas (another GREAT, authentic recipe I can't wait to share!).

Tuesday: OUT – Violin, soccer, football, room parent meeting, and a PTO meeting…all happening between 4:15 p.m. and 7 p.m.  Needless to say, this mama ain't cookin'….even if she wanted to!

Wednesday:  Basil Pesto Chicken, Oven roasted potatoes & carrots, garlic croissants.

Thursday: Homemade pizza rolls, salad.  My oldest starts his piano lessons (JOY!) this week on Thursday so I'll prep the rolls in the afternoon so hubby can stick them in the oven as we're on our way back from lessons in the afternoon!  Easy, peasy!

Friday:  BBQ Pulled Pork sandwiches, chips, deviled eggs.  My kids will be in HEAVEN!  They love deviled eggs. So do I!

Saturday:  Spaghetti, garlic bread.

Sunday – OUT – my Kindergartener has a birthday party that afternoon, then a football game, then we've got a parent meeting at school!  No time to cook.  Poor me.

    BTW, I love deviled eggs too! Never thought to add them as a side dish to a meal. Great idea!

    Hi Tracey! Thanks for linking up! Would love to have you back next week. Yes, deviled eggs do make great sides! I usually do them as sides a lot in the summer…we’ll do grilled hot dogs or burgers, chips,and deviled eggs! Hope you have fun incorporating them into your menu!
