One of my strategies in meal planning is comparing what’s on sale this week at grocery stores and my favorite, Super Target, then planning around that. I then, of course, go through my coupons which I organize using an envelope system and see how I can stack them to save even more.

There is ONE exception. If I’m craving something particular, I will usually go ahead and make the splurge to have it. Case in point: French dip sammies. It’s been a while since we’ve had these because brisket’s not been on sale lately. But, since I’m jonesin’ for them, I am splurging and buying a brisket to make them. It’s a hefty piece of meat – around a $14 to feed my family of 5, but well worth it. The kids love it, it’s an easy slow-cooker meal, and it’s red meat – my fave!

So here’s our lineup of dinner stars:

Monday: Taco soup, jalapeno cornbread (this was planned last week but I ended up doing an audible).

Tuesday: Out. Thank goodness our busy Tuesdays will soon be ending, right along with soccer and football season.

Wednesday: Oven baked chicken, roasted potatoes + carrots.

Thursday: Slow-cooker pork teriyaki, fried rice, steamed broccoli.

Friday: French Dip sandwiches, chips, deviled eggs.

Saturday: Pizza night!

Sunday – Out/playing it by ear.
